My new favourite breakfast…

Avocado on toast topped with scrambled egg.

This might seem like a strange combination, but trust me, when I first tried this I was addicted instantly.  Quite simply it’s one of the tastiest, quickest breakfasts I’ve ever cooked.  The combination of creamy cool avocado and buttery scrambled eggs is a taste sensation.

All you need to do is mash one medium avocado, season with salt and pepper, and spread onto a thick slice of toasted granary bread.  Cook your eggs as you like.  I usually whisk two eggs and cook really quickly in a frying pan with a knob of butter.  The eggs only take about a minute, as I like mine quite loose.

Add a few dashes of Tobasco, salt and pepper and there you have it.
